It’s possible dementia could prevent her from focusing on the activity of painting. Did she enjoy painting before????
Maybe a simple activity that she liked to engage in may stimulate her and encourage her engagement.
How about upon your visit, you take her outside( if possible) for a walk. She could still participate in confined to a wheelchair. Being outdoors seeing nature is great stimulation for anyone with dementia.
another approach is to ask close family member/s what gift would be most appropriate.

The artistic side of ones brain is opposite of where the effects of dementia are, so by all means bring her some painting supplies. Just perhaps keep them a little more simple for her.
If you were to go into any Adult Daycare facility for folks with dementia, you will see lots of folks taking art classes and spending time coloring.
And it's also why someone who may be somewhat non verbal can sing the words to songs that they grew up singing, because music too is part of the artistic side of the brain.

Perhaps a large book of paintings. High on art low on wordiness. My brother always loved pouring over his vintage cars picture books, both before and after his Lewy's dx.
